Lucian Dillingham

President & CEO

Since 1958, Lucian Dillingham has made groundbreaking strides as a pioneer in the foodservice industry. At the onset, he broke barriers, beginning his foodservice career as the first African American manager of Air Force Officer Clubs. In 1975, after successfully managing 20 Officer Clubs in Europe and achieving the rank of Chief Master Sergeant, Mr. Dillingham went on to become Director of Training for the Commercial Foods Department, and a Trade and Industry Instructor at the Howard Career Center in Wilmington, Delaware, where he earned the distinction of “Teacher of the Year” for his notable ability to prepare students for management in food and beverage service. After nine years of teaching, Mr. Dillingham bravely decided to reenter the field as an entrepreneur and President of Dilgren Enterprises, Inc.

In 1990, Mr. Dillingham moved to Atlanta, Georgia where he launched an original concept, creating a hometown soul food favorite, Mo’ Better Chicken. With an award-winning taste and quality service, Mr. Dillingham landed a coveted concessions contract with the Georgia Dome, gaining exposure that widely popularized the brand. He was recognized by Georgia Dome management for “expertise in marketing, staff development and profound communications skills.” After opening four free standing units and perfecting a sophisticated management and communications system, Mr. Dillingham was invited in 1995 to become an airport concessionaire at the Hartsfield-Jackson Atlanta International Airport.  

Under Mr. Dillingham's leadership MBC Concessions has expanded to a number of airports nationwide, providing each guest an outstanding experience on every visit.

Eldred Hall

Director of Operations

With over 25 years of experience, Eldred Hall is a focused, driven and respected leader managing operations and driving impactful marketing initiatives across the food and beverage industry. He believes the key to an operation’s success is by developing people, optimizing production, maximizing growth opportunities, which all lead to increasing profit.

Eldred serves as the Director of Operations for MBC Concessions, Inc. having had a strong, diverse base of restaurant experience ‘serving’ a multitude of concepts including Fine Dining (Kansas City Prime -Steakhouse, Sonoma- Italian), Casual Dining (Arroyo Grille – Southwest Cuisine), Casual – (TGI Friday’s, Applebee’s) QSR/Fast Casual (Five Guys, Taco Bell), Themed Restaurants (Motown Café), Airport Concessions (Moe’s Southwest, Houlihan’s, Wendy’s, Sweetwater Grill). More recently, Eldred has worked as a restaurant operations/food and beverage Executive Consultant.

A self-described restaurant operations solutionist specializing in maximizing business performance with a hands-on management style, Eldred is very excited to be a part of the MBC Concessions team.
